  1. 2 bunches romaine hearts, torn

  2. 1/4 pound sliced fresh mushrooms

  3. 2 green onions, thinly sliced

  4. 3 tablespoons olive oil

  5. 3 tablespoons cider vinegar

  6. 3 tablespoons heavy whipping cream

  7. 4-1/2 teaspoons sugar

  8. 1-1/2 to 2 teaspoons dried tarragon

  9. 1/4 to 1/2 teaspoon salt Dash cayenne pepper

  1. In a large salad bowl, combine the romaine, mushrooms, and onions. In a small bowl, whisk the oil, vinegar, cream, sugar, tarragon, salt and cayenne. Pour over salad and toss to coat. Yield: 4-6 servings.
