  1. Italian Cream Cake

  2. 1/2 c shortening

  3. 2 c sugar

  4. 5 eggs, separated

  5. 2 c flour

  6. 1 ts soda

  7. 1/2 ts salt

  8. 1 c buttermilk

  9. 7 oz coconut

  10. 1 c pecans, chopped

  11. 8 oz cream cheese, softened

  12. 1/2 c margarine

  13. 1 lb powdered sugar

  14. 1 ts vanilla

  15. 1/2 c pecans

  16. Cream margarine and shortening with sugar. Add egg yolks. combine

  17. flour, soda and salt and add alternately with buttermilk. Add

  18. vanilla, coconut and pecans. Fold in stiffly beaten egg whites.

  19. 3 8: cak pans. Bake at

  20. 350 for 25 minutes.

  21. Cream cheese and margarine. Add remaining ingredients. Double

  22. ingredients if you like a lot of frosting.
