  1. 275g (10oz) couscous

  2. 6tbsp Worcestershire sauce

  3. 1 courgette, finely diced

  4. 1 red pepper, cored and finely diced

  5. 4 spring onions, finely chopped

  6. 125g (5oz) dried apricots, finely diced

  7. 2 tomatoes, finely chopped

  8. 4 chicken breasts, cooked and cut into strips

  1. Place the couscous in a large bowl and pour over the Worcestershire sauce.

  2. Add 300ml (½ pint) of boiling water from the kettle, mix well, then add the remaining ingredients except the chicken.

  3. Cover the mixture and leave in a cool place for at least 15 mins.

  4. Stir in the cooked chicken and serve.
