  2. 3 cups water

  3. 8 ounces smoked garlic sausage links

  4. 1 1/2 pounds russet potatoes, peeled and chopped

  5. 4 cups chicken broth

  6. 1 large bunch kale, stems removed and leaves thinly sliced

  7. 2 tbsp. olive oil

  1. Bring the water to a boil in a large pot over medium heat. Pierce the sausage links in several places with a fork and add to the pot. Simmer the sausage 15 minutes. Remove sausage from the pot and slice 1/4 inch thick. Add the potatoes and chicken broth to the pot and simmer about 25 minutes until the potatoes are tender. Place 1/2 of the potatoes and liquid in a food processor and puree. Return the puree to the pot. Add the sliced kale and olive oil and simmer about 5 minutes until the kale is tender. Add the sliced sausage to the pot and simmer until heated through. Serve hot.
