  1. 4 Sweet potatoes - peeled, and (large)

  2. Cut into 1" cubes

  3. Salt - as needed

  4. 1 Orange - zested, juiced

  5. 2 tablespoons 30ml Butter

  1. Place sweet potatoes in a large saucepan and cover with salted water. Bring to a boil. Reduce heat, cover, and simmer 10 to 12 minutes or until fork-tender. Drain. Add the zest, juice, butter and a dash of salt.

  2. Beat with an electric mixer until the potatoes are light and fluffy.

  3. This recipe yields 4 servings.
