  1. 1 tablespoon oil

  2. 4 boneless, skinless chicken breasts

  3. 1 medium zucchini, sliced

  4. 1 medium red pepper, sliced

  5. 1 medium onion, sliced

  6. 1/2 teaspoon no-salt herb and spice seasoning

  7. 2 cups frozen cheese tortellini

  8. 1/2 cup salsa

  1. In large skillet, heat oil over medium heat. Add chicken and cook 6 minutes or until light brown. Remove chicken from skillet and keep warm. Spray skillet with cooking spray. Add zucchini, red pepper and onion. Sprinkle with seasoning. Cook about 4 minutes, or until vegetables are tender crisp.

  2. Add frozen tortellini and place chicken on top. Spread salsa evenly over chicken. Cover and cook about 20 minutes or until fork can be inserted in chicken with ease.
