  1. 2lbs potatoes, peeled

  2. salt, pepper to taste

  3. 2 cups flour

  4. butter

  5. meat sauce

  6. grated parmesan to taste

  7. 2-3 minutes - if the dough seems sticky, add a little mroe flour. cut into 4-6 pieces and roll each piece into long cylinders

  8. 1/2" thick. cut each cylinder into 1" long pieces and pinch the center of each between your thumb and index finger. sprinkle with flour.

  9. 350 F oven for about 10 minutes. serve immediately.

  10. (i just mixed in some pesto with the gnocchi when i made it and skipped the baking.)
