  1. 78.07 ml olive oil

  2. 2 medium onions , finely chopped

  3. 1 small bell pepper , finely chopped

  4. 2 small tomatoes , finely chopped

  5. 4.92 ml cilantro , finely chopped

  6. 1 garlic clove , finely chopped

  7. 14.79 ml tomato paste

  8. 453 1/29 g jumbo bay shrimp

  9. 29 1/28 ml lemon juice

  10. 118 1/59 ml coconut milk

  1. Heat oil in skillet, add onion, pepper, tomatoes, cilantro, garlic and tomato paste.

  2. Cook for 10 minutes.

  3. Bring sauce to a boil, then add shrimp and lemon juice.

  4. Reduce heat to medium and cook for 2 minutes.

  5. Add coconut milk and bring the mixture to a boil.

  6. Serve over rice. ?
