  2. Marshmallow Easter Eggs

  5. 2 tbsp. Knox gelatin

  6. 1/2 c. cold water

  7. 2 c. sugar

  8. 3/4 c. hot water

  9. 1 c. white Karo syrup

  10. 2 tsp. vanilla

  11. for hands

  12. milk chocolate

  13. Preparation : Mix gelatin and cold water. Set aside

  14. until water is absorbed. Combine sugar, hot water, 1/2 cup

  15. of the Karo syrup and cook to the soft ball stage (240

  16. degrees). Cool a few minutes. Beat with mixer at full

  17. speed. Add the remaining Karo syrup and all of the gelatin

  18. 1 tablespoon at a time. Beat

  19. 7 to 8 minutes after

  20. the last addition of the gelatin. Add vanilla. Pour into a

  21. well greased 7 x 9 inches pan and chill thoroughly. Dust

  22. hands with cornstarch. Spoon marshmallow out of pan and form eggs. Brush excess cornstarch off and let dry for 1/2

  23. hour on waxed paper. Pour melted milk chocolate over eggs

  24. and let set. Refrigerate for easier handling. - - - - - - - - - - - - - - - - - -
