  4. This is a rich, but great potato soup.

  5. 4 large potatoes

  6. 2/3 cup butter

  7. 2/3 cup flour

  8. 1 1/2 quarts of milk

  9. Salt and Pepper

  10. 4 green onions

  11. 1 cup sour cream

  12. 2 cups crisp-cooked, crumbled bacon

  13. 5 ounces of grated cheddar cheese

  14. Procedure

  15. Heat oven to 350 degrees and bake the potatoes until for tender.

  16. Melt butter in a medium saucepan. Slowly blend in flour with a wire

  17. whisk until thoroughly blended. Gradually add milk to the butter-flour

  18. mixture, whisking constantly. Whisk in salt and pepper and simmer over

  19. low heat, stirring constantly.

  20. Cut potatoes in half, scoop out the meat and set aside. Chop half the

  21. potato peels and discard the remainder. When milk mixture is very hot,

  22. whisk in potato. Add green onion and potato peels. Whisk well, add

  23. sour cream and crumbled bacon. Heat thoroughly. Add cheese a little

  24. at a time until it is all melted in.

  25. Serve with crusty French Bread and fresh butter. Mucho Goodo!
