  1. 6 slices bacon

  2. 1tbsp butter

  3. 1 onion, chopped

  4. 4 potatoes, cooked and finely diced

  5. 6 eggs

  6. tbsp salt

  7. 60ml milk

  8. Freshly ground black pepper

  1. Fry the bacon until crisp. Remove and drain on paper towel.

  2. Remove the bacon fat from the frying pan, add the butter and sauté the onion until soft.

  3. Add the cooked potatoes and brown lightly.

  4. Beat the eggs lightly, add the salt, pepper, milk and the chopped bacon.

  5. Pour the egg mixture over the onions and potatoes and stir occasionally until cooked.
