  1. Preheat the oven to 400. Coat a 12 cup muffin pan with nonstick spray. Cream .5 cup Stevia, applesauce and yogurt in mixing bowl. In a separate bowl, combine flours and salt. Slowly add the flour mixture to the creamed mixture alternating with the diet Mt. Dew. Add lemon juice and zest. Mix until just combined...do not overmix. Fold in blueberries. Divide the batter between the prepared muffin cups. Sprinkle tops with remaining sugar. Bake for 30-35 minutes or until tops are golden and toothpick comes out clean. Cool, remove from pan and and enjoy!
