  2. 1 1/2 pounds Italian sausage links

  3. 1 cup chopped onion

  4. 3 stalks celery, chopped

  5. 1 large red bell pepper, stemmed, seeded and chopped

  6. 1 large green bell pepper, stemmed, seeded and chopped

  7. 1 large yellow bell pepper, stemmed, seeded and chopped

  8. 1 tbsp. minced garlic

  9. 3 tbsp. olive oil

  10. three 14 1/2 ounce cans Italian style stewed tomatoes

  11. 16 ounce can red kidney beans, rinsed and drained

  12. 15 ounce can butter beans, rinsed and drained

  13. 6 ounce can tomato paste

  14. 1 tbsp. chili powder

  15. 1 tsp. salt

  16. 1 tsp. pepper

  1. Place sausage links in a large saucepan with water to cover. Bring to a boil. Reduce heat and simmer sausage until cooked through. Drain sausage and refrigerate until cooled completely. Slice sausage links into rounds. Combine the onion, celery, bell peppers, garlic and oil in a large pot. Cook over medium heat about 8 minutes until vegetables are tender, stirring frequently. Add sliced sausage, stewed tomatoes, kidney beans, butter beans, tomato paste, chili powder, salt and pepper. Bring to a boil, stirring frequently. Reduce heat to medium low, cover and simmer about 30 to 45 minutes until chili is slightly thickened. Serve hot.
