  1. 1/2lg Vanilla bean, split

  2. 2 1/4c Skim milk

  3. 1/2c Sugar

  4. 1/4oz Envelope unflavoured gelatin

  5. 1 ds Salt

  6. 1 1/2c Plain low-fat yogurt

  7. 1/4c Corn syrup

  8. 1 Durian seed pod

  1. + Directions : Durian Frozen Yogurt ** Scrape the seeds from vanilla bean. Combine seeds, vanilla bean and milk in a medium saucepan. Bring to a boil; remove from heat and let stand 30 minutes. Discard vanilla bean pod. Add sugar, gelatin and salt. Let stand 1 minute. Cook over low heat for 5 minutes or until gelatin disolves, stirring occasionally. Remove from heat and cool completely. Stir in yogurt and corn syrup. Place in food processor or blender, along with durian seed pod and blend thoroughly. Strain into bowl, cover and chill for 8 hours. Process in ice cream maker as per manufacturer's instructions. Garnish with mint. tomn
