  1. 5 cups 1185ml Potato - peeled and cubed

  2. 1/2 cup 118ml Plain low-fat yogurt

  3. 1 tablespoon 15ml Fresh lemon juice

  4. 2 teaspoons 10ml Sugar

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/4 teaspoon 1 1/3ml Pepper

  1. Place potato in a large saucepan; cover with water, and bring to a boil.

  2. Reduce heat; simmer 15 minutes or until tender.

  3. Drain potato, and return to pan. Add the yogurt and remaining ingredients; beat at medium speed of a mixer until smooth.
