  1. Combine flour, yeast, salt, raisins, half brown sugar. Add water and mix until thoroughly combined. Cover loosely with plastic wrap and sit in warm place 12-18 hours.

  2. turn dough onto well floured surface. Dust dough with cinnamon and fold more. cover and let sit for 2 hours - double in size. Let rest for 10 addl minutes - Preheat oven 450 degrees
