  1. 10 ounces uncooked couscous

  2. 1 3/4 cup vegetable or chicken broth

  3. 4 tablespoons olive oil

  4. 1/2 cup lemon juice

  5. 3/4 teaspoon salt

  6. 1/4 teaspoon ground black pepper

  7. 1 cucumber, seeded and diced

  8. 1 zucchini, diced

  9. 3 cloves garlic, minced

  10. 1 big red onion, chopped

  11. 1/2 cup fresh parsley, chopped

  12. 1/4 cup fresh basil , chopped

  13. 6 slices lemon

  14. Mediterranean flat bread

  15. In a saucepan or skillet, heat the olive oil under medium heat. Saute the garlic, onions and zucchini for 5-7 minutes until soft.

  16. 1 minute. Remove from heat. Let it stand for 5 minutes. After, fluff it with a fork. Add the cucumber, parsley, basil, sauteed zucchini and lemon juice. Mix well and season it with salt and pepper.

  17. Serve with warm with lime wedges and flat bread.
