  2. 24 Red sweet peppers

  3. 1 tb Whole cloves

  4. 1 Blade mace

  5. 3 Inch stick cinnamon

  6. 1 tb Allspice

  7. 1 small Piece ginger root

  8. 1 tb Whole mustard seed

  9. 4 c Vinegar

  10. 7 c Sugar

  1. Wash peppers, remove seeds and membranes. Soak overnight in a brine madein proportion of 1 tablespoon salt to 1 quart water. Drain and choppeppers. Heat spices, vinegar, and sugar. Add peppers. Simmer 1/2 hour.

  2. Strain. Pack peppers in freshly sterilized jars. Boil down the picklesirup until thick and pour over peppers until jar is filled.
