  1. Corn and Pumpkin Stew

  2. 3 ears of corn and 10 oz frozen corn, off the cob

  3. 1 small pumpkin (about 3 pounds)

  4. 1 yellow onion, peeled and sliced

  5. 1 c water

  6. Salt and pepper to taste

  7. Shell the corn from the cob and mash to a pulp. I use my food

  8. processor for this. If using frozen corn, you need not let it

  9. defrost if you have a food processor.

  10. Peel and seed the pumpkin and cut into small pieces. Place all

  11. ingredients in a covered saucepan and simmer until the pumpkin is

  12. soft, about 30 minutes. Serve hot.

  13. Serves 6.
