  1. 1 Onion, cut in half and Half 4 English muffins, split in

  2. 1 1/2 tb Cornstarch

  3. 2 ts Paprika

  4. 4 ts Louisiana red hot sauce

  5. 4 ts Worcestershire sauce

  6. 1 c Tomato juice

  7. Liquid

  8. 1 cn (16 oz) tomatoes,including

  9. 2 tb Butter or margarine

  10. 1 Bay leaf

  11. 2 cl Garlic,thinly sliced

  12. 2 Ribs celery,julienned

  13. Julienned

  14. 1 Green bell pepper, Thinly sliced

  15. 8 Hard cooked eggs, sliced

  1. Place onion,bell pepper,celery,garlic,bay leaf and butter in a 2 quart glass measure.

  2. Cover with vented plastic wrap.

  3. Microwave on high for 5 minutes.

  4. Drain liquid from tomatoes into a small bowl;set aside.

  5. Coarsely chop tomatoes and add to vegetables in glass measure.

  6. Add tomato juice,Worcestershire sauce,hot sauce and paprika;stir well.

  7. Cover again and microwave on high for 5 minutes.

  8. Remove bay leaf.

  9. Using a small wire whisk,blend cornstarch into reserved tomato liquid.

  10. Stir mixture into heated sauce.

  11. Cover again.

  12. Stirring midway through cooking,microwave on high for 5 to 6 minutes or until sauce is bubbly hot and thickened.

  13. Toast muffins and top with sliced eggs.

  14. Top with sauce;serve immediately.

  15. Makes 4 servings.
