  1. 60ml extra-virgin olive oil

  2. 35g minced ginger

  3. 10g minced garlic

  4. 25g brown sugar

  5. 75ml soy sauce

  6. 60ml mirin, or white wine

  7. 1 tsp sesame oil

  8. 65ml rice wine vinegar

  9. 150g julienned carrots

  10. 100g thinly sliced napa cabbage

  11. 50g thinly sliced green cabbage

  12. 100g thinly sliced red onion

  13. 50g thinly sliced red pepper

  14. 50g thinly sliced pak choy

  15. 50g bean sprouts

  16. 50g julienned mangetout

  17. 50g julienned spring onions

  18. 15 wonton skins, fried

  19. Peanuts, for garnish

  1. Asian slaw 1) In a small saucepan add 2 tbsp olive oil, ginger and garlic, lightly saute until lightly brown. Add brown sugar, soy sauce, and mirin. Saute for 5 mins and remove from heat. When cool whisk in olive oil, sesame oil and rice wine vinegar.

  2. Mix all vegetables in a bowl and toss with dressing.

  3. Garnish with crushed wontons and peanuts.
