  8. 2 ea Parsnips

  9. 2 md Onions

  10. 1 sm Celery knob

  11. 1 t Salt

  12. 2 ea Bay leaves

  13. 5 ea Peppercorns, black

  14. 1 tb Butter, unsalted

  15. 1 tb Flour, all-purpose

  16. 1 pn Paprika

  17. 1/2 lb Fish fillet -- small pieces

  18. 1 ea Fish head

  19. 1 lb Spawn (fish roe)

  20. 2 tb Vinegar, wine, white

  21. 1/4 c Sour cream

  22. Peel vegetables and cut into small pieces, and together with salt, bay leaves and peppercorns cook

  23. them in 2 qts water till they are almost soft.

  24. Make a roux with butter and flour, cook for only a

  25. few minutes, leaving it very light. Add paprika and whip 1/2 cup cold water into the roux.

  26. Pour roux into the vegetable mixture and bring again

  27. to a boil. Reduce heat to a simmer.

  28. Add fish pieces and fish head, and simmer soup for 10 minutes. Add spawn and cook for another

  29. 5 minutes.

  30. Pour in the vinegar; just before serving stir in the

  31. sour cream. Adjust salt and vinegar to your taste.

  32. Note: During Lent most Hungarians eat a lot of fish.

  33. There are almost always little bits of fish meat,

  34. bones and heads left over and that's when this soup
