  2. MEXICAN CORN SCRAMBLE

  6. 1 sm Onion, chopped

  7. 3 tb Butter or margarine

  8. 1 cn (11 ounces) whole kernel

  9. -corn with peppers,

  10. -drained

  11. 1 cn (2-1/4 ounces) sliced ripe

  12. -olives, drained

  13. 8 Eggs, lightly beaten

  14. 1 c Cubed fully cooked smoked

  15. -ham or sausage

  16. 3/4 c Shredded cheddar cheese

  17. -Tortilla chips

  18. -Picante sauce

  19. In a medium skillet, saute onion in butter until

  20. tender. Stir in corn and olives. Add eggs; cook and stir over medium heat until eggs just begin to set.

  21. Add ham or sausage and cheese. Cook until eggs are

  22. fully cooked and cheese is melted. Serve with tortilla

  23. chips and picante sauce. Yield: 6 servings. From the
