  1. Crumb Mixture

  2. 1 cup 62g / 2 1/5oz Flour

  3. 3/4 cup 120g / 4 1/5oz Light brown sugar

  4. 1 teaspoon 5ml Butter

  5. Filling

  6. 1 Egg

  7. 1 cup 237ml Molasses

  8. 1 cup 237ml Boiling water

  9. 1 teaspoon 5ml Baking soda

  10. 1 Nine-inch pie shell

  11. Garnish

  12. Whipped cream

  1. Crumb Mixture: In a bowl combine flour and sugar. Cut butter into the flour and sugar until mixture resembles crumbs. Remove 1/2 cup of the crumb mixture and set aside.

  2. Filling: To larger part of crumb mixture add egg and molasses. Blend in 3/4 cup boiling water. Dissolve soda in remaining 1/4 cup water and add last. Pour into pie shell. Sprinkle with 1/4 cup reserved crumbs.

  3. Bake at 425 degrees for 15 minutes. Add remaining crumbs and bake 40 to 45 minutes.

  4. Garnish with whipped cream.

  5. This recipe yields 1 nine-inch pie.
