  1. 1 lb 454g / 16oz Penne

  2. 4 cups 948ml Milk

  3. 4 tablespoons 60ml Unsalted butter

  4. 6 tablespoons 90ml All-purpose flour

  5. 1 teaspoon 5ml Paprika

  6. Salt

  7. Freshly ground black pepper

  8. 12 oz 340g Gruyere cheese

  1. Bring a large pot of water to boil. Add penne and cook until just tender. Drain and rinse under cool water.

  2. Preheat oven to 350F.

  3. Bring milk just to a boil and set aside. Melt butter in heavy saucepan and add flour. Whisk over low heat for 5 minutes. Do not brown.

  4. Add hot milk and 1/2 paprika to flour mixture and mix well. Add salt and pepper and cook over medium heat until thickened. Toss with penne and pour into 13x9x2 buttered pan.

  5. Sprinkle cheese over top and bake 20 to 25 minutes.

  6. Place pan under broiler until top is bubbling and golden, 3-4 minutes.

  7. Serve immediately.

  8. NOTES : Substitute Jarlsberg, cheddar or mozzarella for the Gruyere cheese.
