  2. 1/3 red onion , sliced

  3. 1 medium carrot , cut into 1/4 inch slices

  4. 1 teaspoon ginger

  5. 1/2 cup water

  6. 1/4 cup gluten-free vegetable stock

  7. 1/3 cup canned pumpkin

  8. 1 pinch nutmeg

  9. 1 teaspoon gluten-free nonfat sour cream

  1. Heat olive oil in a pot over medium heat.

  2. Add onion, carrot, and ginger; cook until golden, stirring constantly.

  3. Stir in water, broth, pumpkin, and nutmeg.

  4. Reduce heat and simmer for 3-5 minute.

  5. Remove from heat and puree in blender.

  6. Enjoy!
