  1. 2 lbs 908g / 32oz Minced fresh tuna

  2. 2 tablespoons 30ml Whole grain mustard

  3. 2 tablespoons 30ml Capers - minced

  4. 1/4 cup 4g / 0.1oz Cilantro - minced

  5. 1/4 cup 23g / 0.8oz Scallions - minced

  6. 1 tablespoon 15ml Chipotle puree Spicy Mango Ketchup - (recipe follows)

  1. Recipe Instructions Prepare a wood or charcoal fire and let it burn down to embers. In a large mixing bowl, combine all ingredients and season to taste with salt and pepper. Refrigerate until ready to use. When ready to use, form into 1 inch thick patties. Brush tuna burgers with olive oil and season with salt and pepper. Grill for 1 minute on each side for rare.
