  2. 2 pounds chicken -- cut up

  3. 1/2 teaspoon salt

  4. 1 pound tomatoes -- peeled

  5. 6 ounces peanuts

  6. 1 small onion -- chopped

  7. 1 clove garlic

  8. 1/2 small French roll or 1 stick white bread -- browned in oil

  9. 4 cloves

  10. 2 tablespoons lard or oil

  11. salt and pepper to taste

  1. Half cover the chicken with salted water; cover and cook until tender. Blend remaining ingredients, except lard or oil, and sauté sauce, adding a little of the cooking liquid. Stir until thick. Season to taste. Add the chicken and simmer only long enough for it to absorb the taste.

  2. Note: Pork or veal may be substituted.
