  1. 1/2 lb 227g / 8oz Bacon - diced

  2. 2 cups 125g / 4.4oz Chopped onions

  3. 8 Eggs

  4. 1 teaspoon 5ml Salt

  5. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  6. 1/4 teaspoon 1 1/3ml Nutmeg

  7. 3 cups 711ml Milk

  8. 1 lb 454g / 16oz Gruyere or Mozzarella cheese - diced

  1. Saute bacon in skillet over medium heat until cooked halfway, 6 to 8 minutes. Add onions and cook until onions are tender, but not browned. Pour off most of fat.

  2. Combine eggs, salt, pepper and nutmeg and beat well. Add milk and blend well. Spread onion mixture in 13- by 9-inch pan, then sprinkle evenly with cheese. Pour egg mixture over cheese.

  3. Bake at 375 degrees 35 to 45 minutes, or until knife inserted near center comes out clean.

  4. This recipe yields 12 servings.
