  1. 1 cup dried codfish

  2. 4 medium potato es

  3. 1 egg

  4. 2 tbsps milk

  5. 4 tbsps butter

  1. Pour enough cold water (or milk) over the codfish to cover it. Soak for 1 hour. While the fish is soaking, peel and chop the potatoes.

  2. Drain the fish. Put the fish and potatoes in a two-quart saucepan and mix well. Add enough cold water to cover. Bring to a boil. Turn the heat to low. Cover, and simmer until the potatoes are tender, about 20 minutes.

  3. Drain the fish mixture. Mash it with a fork.

  4. Beat the egg in a bowl. Mix in the milk. Stir into the fish mixture.

  5. Form the mixture into small balls. Flatten them with a spatula to make 2-inch cakes.

  6. Melt the butter in a heavy frying pan. Add the cakes. Cook them over medium heat until they are golden. Turn with the spatula and cook the other side.
