  1. 6 1 1/2 cups/225 g all purpose/plain flour

  2. 2 tsp baking powder

  3. 1 tsp ground nutmeg

  4. 1 tsp ground cinnamon

  5. 1/2 tsp baking soda

  6. 1/2 tsp sari

  7. 1/2 cup/125 g butter

  8. 1 cup/200 g granulated sugar

  9. 3 eggs

  10. 10 oz/300 g finely shredded carrots

  11. 1 cup/100 g chopped walnuts

  12. Orange Cream Cheese Frosting:

  13. 1/2 cup/125 g cream cheese, softened

  14. 1 tbsp finely grated orange zest

  15. 1 tbsp orange juice

  16. 1 1/2 cups/225 g confectioners'/ icing sugar

  1. Method :

  2. Preheat the oven to 350°F/180°C/gas 4.

  3. Sift the flour, baking powder, nutmeg, cinnamon, baking soda, and salt into a medium bowl.

  4. Butter a 9-inch (23-cm) cake pan and linewith waxed paper.

  5. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy. Add the eggs one at a time, beating until just blended after each addition.

  6. Mix in the dry ingredients, carrots, and walnuts. Spoon the batter into the prepared pan.

  7. Bake for 40-50 minutes, or until a toothpick inserted into thecenter comes out clean. Turn out onto a rack and let cool completely.

  8. Orange Cream Cheese Frosting: Beat the cream cheese, confectioners' sugar, and orange zest and juice to make a spread-able frosting.

  9. Spread the frosting over the top of the cake.
