  1. 3 md Ripe tomatoes, peeled

  2. 2 ts Olive oil

  3. 2 ts Lime juice

  4. 1 tb Red wine vinegar

  5. chopped cored, seeded and fine

  6. 1/2 Fresh/canned jalapeno pepper

  7. 1 Minced garlic clove

  8. 1/2 c Red chopped onion

  9. cored, seeded and chopped

  10. 1/4 ts Hot red pepper sauce

  1. In a medium bowl mix tomatoes, onion, garlic and jalapeno pepper.

  2. Stir in vinegar, lime juice, olive oil and red pepper sauce.

  3. Cover and chill in the refrigerator at least 2 hours before serving.

  4. Store tightly covered in the refrigerator for up to 1 week.
