  1. 1 1/2 pounds broccoli spears

  2. 1/2 cup water

  3. 2 teaspoon butter

  4. 1/4 teaspoon salt

  5. 1/4 teaspoon black pepper

  6. 2 garlic cloves, chopped

  7. 1 teaspoon grated lemon rind

  8. 2 teaspoons fresh lemon juice

  1. Peel the broccoli stems using a vegetable peeler. Combine broccoli and water in a large non-stick skillet, cover and cook over medium-high heat 6 minutes until crisp-tender. Remove from the pan and wipe the pan dry with paper towels. Melt butter in pan over medium heat. Add salt, pepper, and garlic, cook 2 minutes, stirring frequently. Add broccoli and toss to coat. Sprinkle broccoli mixture with rind, drizzle with lemon juice.
