  1. 24 slices French bread (3/4 inch thick)

  2. 3 cups cubed cooked chicken breast

  3. 4 medium tomatoes, cut into chunks

  4. 1 can (15-1/2 ounces) great northern beans, rinsed and drained

  5. 1 large cucumber, seeded and chopped

  6. 1/4 cup chopped fresh basil

  7. 1/4 teaspoon salt

  8. 1/4 teaspoon pepper

  9. 3/4 cup balsamic vinaigrette

  10. 1/2 cup shredded Parmesan cheese

  2. In a large bowl, combine the bread, chicken, tomatoes, beans, cucumber, basil, salt and pepper. Drizzle with vinaigrette; toss to coat. Refrigerate for 30 minutes. Sprinkle with cheese; toss. Yield: 6 servings.
