  1. 285g brown rice

  2. salt to taste

  3. 3 spring onions, finely chopped

  4. 1 red pepper, cored, seeded and chopped

  5. 1 green pepper, cored, seeded and chopped

  6. 125g raisins

  7. 75g cashews, raw or roasted, roughly chopped

  8. 2 tablespoons chopped parsley

  9. 3 tablespoons soy sauce dressing (see below)

  10. For the Soy Sauce Dressing:

  11. 125ml cooking oil

  12. 2 tablespoons soy sauce

  13. 1 tablespoon lemon juice

  14. 2 teaspoons caster sugar

  15. 1 clove garlic, crushed or finely chopped

  16. 1 (1cm) root ginger, finely chopped

  17. salt and pepper to taste

  1. To make the dressing: Place cooking oil, soy sauce, lemon juice, caster sugar, garlic, ginger and salt and pepper into a jar. Shake well to blend.

  2. Cook rice in boiling salted water for 40-45 minutes or until soft. Rinse, drain and let cool.

  3. In a bowl, toss together cooled rice, spring onions, red pepper, green pepper, raisins, cashews and parsley.

  4. minutes before serving, add soy sauce dressing and toss well.
