  1. For the vanilla custard:

  2. 2 1/2 cups water or 600 ml

  3. 1 tin NESTLÉ® Sweetened Condensed Milk or 2 teaspoons vanilla essence

  4. 5 egg yolks

  5. 4 tablespoons cornstarch

  6. Additional:

  7. 2 packets puff pastry, frozen

  8. 3 1/2 cups fruit salad or 800 g, mixed fresh fruits, sliced

  1. Roll the puff pastry using a rolling pin to stretch it and make it thinner before cutting it into 30cm × 10cm rectangles. Arrange them in a non-stick pan and keep them in the fridge for 10 minutes to set before baking.

  2. In the meantime, prepare the vanilla custard: Boil the water, NESTLÉ® Sweetened Condensed Milk and vanilla essence in a large saucepan. In a bowl, mix the egg yolks and cornstarch and add them to the boiled mixture. Cook over medium heat for 5 minutes until they get a thick texture. Keep aside to cool down.

  3. Preheat the oven at 200 °C and bake the puff pastry for 15 minutes until golden in color. Keep aside for 10 minutes to cool. Pour a layer of the vanilla custard on top of the baked puff pastry, add some mixed fruits and brush them with apricot jam.
