  1. 2 slices bacon, quartered

  2. 2 tablespoons all-purpose flour

  3. 2 tablespoons sugar

  4. 1/2 teaspoon dry mustard

  5. 1/4 teaspoon salt

  6. 2/3 cup milk

  7. 1 egg yolk

  8. 1/4 cup cider vinegar

  9. 4 cups loosely packed leaf lettuce, rinsed and drained well

  1. Fry bacon in a heavy medium saucepan over medium heat until crisp. Remove bacon to paper towels to drain; reserve drippings in pan.

  2. Meanwhile, combine flour, sugar, mustard and salt in a small bowl; gradually beat milk into mixture. Add milk mixture to drippings in saucepan and bring to a boil, stirring constantly.

  3. Beat yolk in bowl in which milk mixture was combined. Gradually beat about a quarter of the milk mixture into the egg, then return mixture to the saucepan and bring just to a boil. Remove from heat and stir in vinegar. Crumble bacon and fold into dressing.

  4. Divide lettuce among 4 salad plates. Top with dressing and serve immediately.
