  1. Cucumber and Celery Salad

  2. Serves 4 3 tablespoons pickle relish

  3. 2 tablespoons cider or red wine vinegar

  4. 3 tablespoons extra-virgin olive oil

  5. 1 seedless cucumber, quartered lengthwise and sliced

  6. 1/2 inch thick 5 rib celery hearts, sliced 1/2-inch thick

  7. 1/4 cup chopped roasted red peppers or 1/2 small fresh bell pepper

  8. 1 small jar marinated mushrooms or artichoke hearts, chopped

  9. Salt and pepper

  10. Place relish in the bottom of a bowl. Whisk in vinegar then

  11. extra-virgin olive oil. Add cucumber, celery, peppers and marinated

  12. vegetable of choice to the bowl. Toss salad and adjust salt and pepper, to taste.
