  2. 1 Apricot halves - drained and chopped

  3. 1 Naval orange - sectioned

  4. 1 cup 237ml Seedless red grapes - halved

  5. 1/4 cup 59ml Scallions - sliced

  6. 1/4 cup 36g / 1 1/3oz Fresh parsley - chopped

  7. 1/4 teaspoon 1 1/3ml Black pepper

  8. Salt

  1. In a medium bowl, toss quinoa, apricots, oranges, grapes, scallions, parsley and black pepper.

  2. Season to taste with salt, if desired.
