  1. 4 sl Bacon

  2. 1 c Milk

  3. 2 Fresh eggs

  4. 1/2 ts Salt

  5. 1 c Sifted all-purpose flour

  6. 1/2 c Softened butter

  7. 1/8 ts Fresh oregano

  8. 1/8 ts Fresh sage

  1. Preheat the oven to 475 degrees.

  2. Cook the bacon until it is crisp, drain, and reserve about one tb of the drippings.

  3. Crumble the bacon and set it aside.

  4. In a bowl combine the eggs and milk, then add the flour and salt.

  5. Beat until smooth.

  6. Add reserved bacon drippings and stir in the bacon.

  7. Fill well-greased custard c half full.

  8. Bake for fifteen minutes.

  9. Do not remove the popovers from the oven but reduce the heat to 350 degrees and continue baking for twenty-five to thirty minutes more, until the popovers are brown and firm.

  10. Pierce the popovers with the tines of a fork before you remove them from the oven.

  11. Butter them with the fresh herb butter made from the three remaining ingredients.
