  1. 4 md Cucumbers (about 2 pounds)

  2. 1 1/2ts Dried dill weed

  3. 1 tb Fresh or 1/4c Chopped fresh parsley

  4. 1/4c Finely chopped spinach

  5. 1 c Mayonnaise or salad dressing -- GREEN MAYONNAISE -- (about 1/4 cup)

  6. 1 sm Onion, finely chopped

  7. 1/2ts Salt

  8. 1 ts Fennel seed

  9. 2 tb Lemon juice

  10. 1/4c Vegetable oil

  11. 2 ts Tarragon vinegar

  1. + Directions : Cut cucumbers lengthwise in half and remove seeds. Cut each half lengthwise into 4 strips. Cut each strip into pieces, about 2 inches long. cucumbers in glass or plastic bowl. Shake oil, lemon juice, fennel seed, salt and onion in tightly covered container. Pour over cucumbers. Cover and refrigerate at least 12 hours, stirring occasionally. Prepare Green Mayonnaise. Drain cucumbers. Serve with Green Mayonnaise.

  2. SERVINGS; 280 CALORIES PER SERVING. GREEN MAYONNAISEPlace all ingredients in blender or food processor. Cover and blend on high speed, or process, until smooth. Refrigerate at least 2 hours.
