  1. 1 Eden udon - or- eden lotus root,

  2. Jinenjo - buckwheat or Mugwort soba

  3. 2 tablespoons 30ml Eden toasted sesame oil - or- hot pepper sesam

  4. 1 Eden shiitake mushrooms -

  5. 1 cup 237ml - hot water for 20 minutes

  6. 1 cup 62g / 2 1/5oz Onion - sliced (medium)

  7. 1 cup 110g / 3.9oz Carrot - cut into matchstick

  8. 2 cups 474ml Chinese cabbage or bok choy - - or mustard greens,

  9. 3 tablespoons 45ml Eden organic shoyu

  10. 2 tablespoons 30ml Grated fresh ginger

  11. 1/3 cup 30g / 1.1oz Eden tamari almonds - sliced

  1. Prepare pasta. Rinse, drain and mix with 1 tablespoon toasted sesame oil. Set aside. Reserve shiitake soaking liquid, discard stems and slice shiitake mushrooms caps. Heat oil, saute onion, add carrots, shiitake and soaking liquid. Simmer 5 minutes. Mix in greens, add pasta, shoyu, ginger and almonds. Serve.
