  2. 2 cups dried bread crumbs

  3. 1/4 cup parsley -- chopped

  4. 1 teaspoon salt

  5. 1/8 teaspoon black pepper

  6. 1/2 teaspoon sage

  7. 1/2 teaspoon rosemary

  8. 1/4 cup butter or margarine

  9. 1/2 cup onion -- chopped

  10. 3/4 cup celery -- chopped

  11. 2 tablespoons vinegar

  12. 2 tablespoons water

  13. 2 pounds halibut steak --

  14. 1 1/2" thick

  15. 2 slices lean bacon

  16. **EGG-MUSTARD SAUCE**

  17. 3 tablespoons butter or margarine

  18. 2 tablespoons flour

  19. 1 1/2 cups milk

  20. 3/4 teaspoon salt

  21. 1 dash red pepper

  22. 1 tablespoon prepared mustard

  23. 2 hard-cooked eggs -- diced

  1. Combine bread crumbs, parsley, salt, pepper, sage and rosemary; set aside.

  2. Melt butter; add onion and celery, sauteing until tender.

  3. Add vinegar and water; heat. Pour liquid over bread crumbs and toss lightly.

  4. Place mixture in bottom of greased baking dish; place halibut on dressing and top with bacon.

  5. Bake, uncovered, in preheated 350 F. oven, 40 minutes, or until fish flakes with a fork. Serve with Egg-Mustard Sauce.

  6. Egg-Mustard Sauce 1. Melt butter; blend in flour.

  7. Gradually add milk, salt, red pepper and mustard; cook, stirring often, until sauce thickens.

  8. Fold in eggs. Serve hot.
