  1. 2 Mackerel - (8 oz ea) - whole dressed, Or boned

  2. 1 cup 237ml Tomato juice

  3. 1/2 Pineapple - fresh, diced

  4. 2 tablespoons 30ml Vinegar

  5. 1/4 Green pepper - diced

  6. 1/4 teaspoon 1 1/3ml Salt Artificial sweetener to Equal

  7. 6 tspns of sugar

  8. 4 oz 113g Onions - sliced, cooked, And drained

  1. Recipe Instructions Simmer all ingredients except onions and fish in saucepan for approximately 30 minutes. Add onions. Place mackerel in baking dish. Fill cavities with tomato mixture. Bake uncovered at 375 degrees for approximately 25 minutes, or until fish flakes easily. This recipe yields 2 servings.
