  1. Avocado-Tofu-Egg Dip

  2. Yield 1 1/2 cups

  3. 3 tablespoons cider vinegar

  4. 3 tablespoons cold water

  5. 1 cake (1/4 lb) tofu

  6. 1 medium ripe avocado

  7. 2 hard cooked eggs

  8. 1/2 teaspoon Dijon mustard

  9. 1/2 teaspoon prepared horseradish

  10. 1/2 cup very finely minced red onion

  11. salt pepper Place vinegar, water, tofu and avocado in the jar of a blender -

  12. or a food processor fitted with the steel blade attachment. Puree

  13. until smooth. Transfer to a bowl.

  14. Coarsely grate or finely chop the hard-cooked eggs. Stir these,

  15. plus all remaining ingredients into the puree. Cover tightly and chill.
