  7. 5 tablespoons salad oil

  8. 3 eggs -- beaten

  9. 1 small onion -- thinly sliced

  10. 1/2 cup dried shrimp -- chopped

  11. 4 cups cooked rice

  12. 1 cup frozen mixed vegetables -- thawed

  13. 4 ounces canned sliced mushrooms -- drained

  14. salt -- to taste

  15. hot pepper-soy sauce -- to taste

  16. chili powder -- to taste

  17. lettuce -- shredded

  18. In a large skillet, heat 2 tablespoons of the oil. Add eggs and fry in an

  19. even layer until firm. Remove and cut into strips. Add onion to skillet and cook until golden brown; remove and set aside. Heat remaining 3 tablespoons

  20. oil and fry shrimp for one minute. Add rice, vegetables, mushrooms, half of

  21. the egg strips, the onion, and seasonings; stir fry for 3 minutes. Add a

  22. little water if rice is too dry. Serve on a bed of shredded lettuce and top

  23. with remaining egg strips.
