  1. 1 lb Extra firm tofu, drained

  2. 3 ea Green onions

  3. 1 tb Fresh ginger, minced

  4. 3 ea Garlic cloves

  5. 1 tb Brown sugar

  6. 1 tb Soy sauce

  7. 1 pn Saffron, dissolved in

  8. --boiling water

  9. 1/2 c Soy yogurt

  10. 2 tb Chili powder

  11. 2 tb Paprika

  12. 1 tb Garam masala, optional

  13. Salt & pepper to taste

  14. --BROCHETTES--

  15. 4 sm Red onions, unpeeled

  16. 1/4 lb Button mushrooms

  17. 1 pt Cherry tomatoes

  18. 1 ea Green pepper, seeded & slice

  19. Cilantro leaves & lemon

  20. --wedges for garnish

  1. Gently press tofu to remove exces moisture.

  2. Slice into large pieces & then cut each chunk crosswise.

  3. Set aside.

  4. Place green onions & ginger in a food processor & process briefly.

  5. With the machine running, drop in garlic cloves, one at a time.

  6. Process 30 seconds.

  7. Add remaining ingredients.

  8. Process 1 minute.

  9. BROCHETTES: Place onions, mushroom, tofu & marinade in a glass dish & seal.

  10. Refrigerate overnight.

  11. Prepare grill next day.

  12. Quarter onions & remove papery outer skins.

  13. Skewer vegetables & tofu alternately.

  14. Place on hot grill & brush with remaining marinade.

  15. Cover grill tightly & allow to smoke for 5 minutes.

  16. Don't peek.

  17. Trun once & cook for another 3 to 5 minutes.

  18. Garnish with cilantro & lemon wedges.
