  1. 1 teaspoon olive oil

  2. 1 onion, chopped

  3. 3 cloves garlic, chopped

  4. 100g (4 oz) quinoa

  5. 350ml (12 fl oz) vegetable stock

  6. 1 teaspoon ground cumin

  7. 1/4 teaspoon cayenne pepper

  8. salt and freshly ground black pepper to taste

  9. 175g (6 oz) frozen sweetcorn

  10. 2 (400g) tins black beans, drained and rinsed

  11. handful chopped fresh coriander

  1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and sauté until lightly browned.

  2. Mix quinoa into the saucepan and cover with vegetable stock. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to the boil. Cover, reduce heat, and simmer 20 minutes, Stir frozen sweetcorn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and coriander.
