  1. 3/4 lb Boneless chicken pieces

  2. 1 tb Finely chopped scallions

  3. 2 ts Finely chopped ginger

  4. 1 ts Dark soy sauce

  5. 1 ts Light soy sauce

  6. 2 ts Rice wine or dry sherry

  7. chili powder

  8. 1 ts Chili bean sauce, or:

  9. MARINADE -- 3/4 c All-purpose flour

  10. 2 c Oil

  11. 1 ts Granulated sugar

  1. CUT THE CHICKEN INTO STRIPS 2-inches-by-1/2-inch long and put them in a large bowl.

  2. Blend the marinade ingredients together and pour the mixture over the chicken.

  3. Mix well to ensure an even distribution.

  4. Allow the chicken to marinate for 30-to-40 minutes at room temperature.

  5. Heat the oil in a deep-fat fryer or large wok until it is quite hot.

  6. Lightly sprinkle the chicken strips with the flour and deep-fry them for 8 minutes.

  7. Remove them and drain on paper towels.

  8. Serve at once.
