  1. Sea Bass with Wild Mushrooms

  2. (Serves 2)

  3. 2 tablespoons butter

  4. 1 onion, chopped

  5. 1/4 cup white wine or sherry

  6. 12 oz wild mushrooms, sliced

  7. 1/2 cup broth

  8. pepper

  9. 1 tablespoon olive oil

  10. 2 (8-ounce) sea bass fillets, skin on

  11. fresh chopped parsley

  12. Preheat oven to 450.

  13. Put olive oil in a skillet over medium-high heat. Saute onion

  14. until golden. Remove pan from heat and deglaze with the wine.

  15. 2 to

  16. minutes.

  17. Add the stock and season to taste with salt and pepper. Reduce

  18. sauce until slightly thickened.

  19. In an oven proof pan, heat oil until very hot. Season fillets with

  20. salt and pepper and carefully place in hot pan skin-side down.

  21. Cook for 5 minutes, then immediately place in preheated oven.

  22. 3 to 4 minutes or until fish flakes easily.

  23. Remove from oven, place on serving plates. Top with mushroom

  24. mixture. Sprinkle chopped parsley over and serve.
